VStar supports a pluging (described here https://www.aavso.org/sites/default/files/vstar-plugins/vstar-plugins-d…) that will display the light curve photometry for the subset Gaia sources that Gaia classifies as variable and supplies epoch photometry. From my reading of the summary of EDR3 I do not believe any addtional data have been release over DR2.
So far, trying to add data to a VStar light curve from Gaia DR2 (via the plugin) yields the response (for a few different variables) "No observations for the specified period".

I've got the plugin and will have a good look.

Did you verify that you are looking in the Gaia archive for DR2, not DR3? Is the phot_variable_flag set to "VARIABLE"?
If so, please share the Gaia IDs you are searching.
